A Treat for Bonfire Night and beyond…………..

 

These chocolate brownies are just the thing to feast on round an open fire. I’ve made them with spelt flour instead of ordinary flour which makes them a little more easy to digest and the walnuts give them a slightly healthy twist, providing omega 3 oils.

 

Chocolate Brownies

 

Makes 15 brownies

 

Ingredients

175g butter

1tsp vanilla essence

30g cocoa

3 eggs

125g Spelt flour

1 level tsp baking powder

140g walnuts

 

Method

 

Line and grease a baking tin measuring approximately 22cm x 30cm x 2.5cm.

Melt the butter and pour into a mixing bowl.

Add the sugar and vanilla essence.

Beat the eggs and then add them gradually to the butter and sugar mixture.

Sift the flour, baking powder and cocoa and add to the other ingredients; stir everything  together.

Chop the walnuts into small pieces and stir into the mixture. Pour the mixture into the prepared tin and bake for about 30 – 40 minutes.

The brownies are ready when they have risen and a crust has formed on top. They should still be soft in the middle.

Leave in the tin for half an hour to cool and then cut them into squares and leave on a wire rack to cool.

Please note that spelt flour contains gluten and that these are obviously not suitable for anyone with a nut allergy.
