A lovely summer recipe from our Nutritionist, Nicky Seabrook

We are enjoying some great summer weather at the moment and hopefully you are enjoying lots of alfresco dining with fresh salads, BBQ’s  and iced cold drinks. No one wants to spend a long time in the kitchen when temperatures are high so I’ve chosen this meal because it can be put together very quickly.

 

It has the lovely flavours of summer: fresh tomatoes and basil and has a low GL value making it good for anyone trying to lose weight or who has Diabetes.

 

Creamy Cherry Tomato Chicken (Serves 4)

 

Ingredients

 

3 – 4 chicken breasts (depending on your children’s appetites)

450g cherry tomatoes

Sprinkle of sea salt and freshly ground black pepper

3 tblsp crème fraiche

2 tblsp basil leaves  chopped or roughly torn

 

Method

 

1.      Preheat the oven to 200C /400F/Gas mark 6. Pour the oil into a shallow oven proof dish (one that can also go on the hob – or use a roasting tin) and add the chicken breasts, turning to coat in the oil.

2.      Place the whole cherry tomatoes around the chicken in the dish, season with a little salt and pepper, then cook in the oven for about 50 – 60 minutes, or until the chicken is done, basting occasionally.

3.      Place the dish on the hob and add the crème fraiche. Heat gently until it starts to bubble, then simmer for 1 – 2 minutes, stirring until the sauce thickens slightly.

4.      Stir in the basil just before serving.
