Nicky’s Moroccan Lamb Tagine to help boost your immune system!

Here is a another recipe to keep everyone’s immunity boosted!

 

This hearty, warming dish benefits from being cooked in advance. It is simple to make and is ideal if you want to prepare it the day before and then have a day off from the kitchen!

 

 

Serves 8

Ingredients

2 tbsp coconut oil

2 Onions chopped

1 tsp ground cumin

1tsp ground ginger

1 tsp turmeric

½ tsp cinnamon

1kg boneless leg of lamb cut into bite sized pieces

4 garlic cloves peeled

400g can pitted black olives in brine, rinsed and drained to give 150g drained weight

400g can chick peas, drained and rinsed

Handful of pitted dates

250ml pomegranate juice

250ml chicken or beef stock

 

 

Method

Preheat the oven to 150 C / 300F gas mark 2

Heat the coconut oil in a large lidded casserole and saute the onion and spices for 1 minute. Add the lamb and stir until lightly browned. Add the rest of the ingredients and stir well.

Bring the contents to the boil, place the lid on the casserole and transfer to the oven.

Cook for at least 2 hours, or until the lamb is very tender.

 

 

Nutrition Notes

Lamb is a very good source of zinc and I wrote recently about the many studies that have demonstrated how critical zinc is to ensure optimum immunity. Another nutrient that also boosts our immune systems is selenium. You could increase the selenium content of this meal by simply  adding a dessert spoon of molasses.
