Korean Sticky Chicken with Kimchi Cabbage and Brown rice
from Riverford Organics
Serves 2
Ingredients
125 brown basmati rice
15g ginger
1 garlic clove
1 shallot
1 tblsp rice vinegar
2 tblsp Tamari or soya sauce
½ tblsp honey
1/4tsp cayenne pepper – or to taste
1/3 cabbage
250g chicken breast cut into strips
1 tblsp cornflour
1 tsp sesame seeds
4 tblsp kimchi
Method
- Cook rice in boiling water for about 25 minutes until tender.
- Peel and finely grate or chop the ginger and garlic. Peel and finely slice the shallot. Mix them with the vinegar, tamari and honey to make a sauce. Add cayenne pepper, cautiously.
- Cut out a third of the cabbage and discard the tough core. Finely shred the leaves. Wash well.
- Cook the cabbage leaves in a little water with a pinch of salt for 3 – 4minutes, until the leaves have softened. Remove from the heat and drain if there is some water left.
- Season the chicken strips lightly with salt and pepper and dust with cornflour.
- Heat a tblsp of oil in a large frying pan and fry the chicken for 3-4 minutes until coloured, crisp and cooked through. Add the ginger and garlic sauce and sesame seeds and let it bubble away for about a minute until it is sticky. Remove from the heat.
- Return the cabbage to the heat to warm through and stir in the kimchi.
- Drain the rice and serve it topped with the cabbage and sticky chicken.
Nutrition Notes
This recipe has a lot going for it nutritionally. Fermented products such as Kimchi can nourish our gut with healthy bacteria. These bacteria have a positive effect on our immunity and digestion. If you are not sure about the strong, vinegary taste of fermented products like Kimchi and Sauerkraut, this recipe is a great way of introducing it with the cooked cabbage.
The fresh ginger has excellent anti -inflammatory properties and is good for anyone with joint pain. The garlic is a good source of prebiotics and studies have found it to protect against stomach and colon cancer.
